Maggi has always been a backup meal in our household. On days when we are tired or do not feel like cooking anything elaborate, Maggi is usually the quickest option. It is definitely not the two minutes that was advertised, but it is still much faster than most meals.

Recently, I started noticing a lot of Maggi variations online, and that is when I thought of making one using ingredients I usually have at home. This chilli garlic Maggi is spicy, comforting, and comes together very quickly. It is perfect for late nights or lazy evenings.

Ingredients

  • 2 packets of Maggi
  • 3 cloves of garlic, finely chopped
  • Green part of spring onions, finely chopped
  • Coriander for garnish
  • 1 tablespoon chilli powder
  • 2 teaspoons soy sauce
  • Maggi mix (from the packet)
  • 2 teaspoons chilli flakes
  • Half a cup of water (preferably the water used to cook the Maggi)

Method

  1. Cook the Maggi noodles in hot water as per the packet instructions. Once cooked, drain the noodles but keep some of the cooking water aside.
  2. Heat a pan with a little oil. Add the chopped garlic and the green part of the spring onions. Sauté for about 2 minutes until aromatic.
  3. Add the chilli flakes, chilli powder, and the Maggi mix to the pan. Sauté everything together so the spices mix well with the oil.
  4. Add the soy sauce and sauté again for a few seconds to combine the flavours.
  5. Pour in the reserved Maggi cooking water and mix well. Let it cook until the sauce slightly thickens.
  6. Add the cooked Maggi noodles to the pan and toss well, making sure the noodles are evenly coated with the sauce.
  7. Finish with chopped coriander and turn off the heat.

Your chilli garlic Maggi is ready to serve.
